
Kaiserschmarrn like grandma used to make - fluffy, caramelized & irresistible
Airy, golden yellow and slightly caramelized - this Kaiserschmarrn brings back childhood memories! With sour cream, raisins and a dash of rum, it has exactly the same aroma as grandma's pastries. Whether as a dessert or as a sweet main course: This Schmarrn makes the soul smile.
Preparation
Ingredients for 2-3 portions:
Ground mass:
- 4 eggs
- 125 g milk
- 120 g flour
- 100 g sugar (use half separately)
- 1 tbsp sour cream
- 2 cm rum (e.g. straw 80 %)
- 75 g raisins
For baking & caramelizing:
- 50 g butter/lard (for baking)
- 50 g butter (for caramelizing)
- Powdered sugar for sprinkling
Step-by-step preparation:
- Prepare the egg whitesBeat the egg whites with half the sugar until firm.
- Mix the doughMix the egg yolks, milk, flour, sour cream, rum and the second half of the sugar into a smooth batter. Carefully fold in the beaten egg whites.
- Prepare the panHeat butter or clarified butter in an ovenproof frying pan. Pour in the batter and sprinkle with the raisins.
- Baking in the ovenPlace the pan in the preheated oven and bake the Kaiserschmarrn at 180 °C (top/bottom heat) for approx. 20 minutes.
- Tearing & caramelizingTear the Schmarrn into bite-sized pieces with two forks. Melt the butter in a pan, fry the pieces in it and lightly caramelize with sugar.
- ServeSprinkle with powdered sugar and serve with apple sauce, stewed plums or cranberries.
