Spareribs in the pressure cooker - tender, quick & full of flavor!

Summer, barbecue and ribs? Nothing beats it! But this time we're doing it differently: with the pressure cooker, you can get butter-tender spare ribs in record time. The perfect recipe if you're short on time but still want to cook up a big meal. And the best thing is: we make the BBQ sauce straight from the stock - full flavor guaranteed!

Preparation

Ingredients for 3-4 portions

Rub:

  • Salt
  • Sugar
  • Paprika powder (smoked & sweet)
  • Curry
  • Piment d'Espelette
  • Rosemary
  • Garlic powder

Spareribs & brew:

  • 1.5 kg baby back ribs
  • 500 ml chicken stock
  • 250 ml cola
  • 2 onions, halved
  • 3 garlic cloves
  • 3 tbsp ketchup or BBQ sauce

Preparation steps

  1. Prepare the rub: Mix all the spices together and rub the ribs thoroughly.
  2. Liquid into the pot: Add the chicken stock, cola, onions, garlic and ketchup to the pressure cooker.
  3. Place the ribs: Loosely roll up the ribs and place in the steamer tray.
  4. Pressure cooking: Close the lid and cook for 20 minutes at full pressure. Then allow to steam off slowly.
  5. Prepare the sauce: Pass the stock through a sieve, puree the onions and garlic with the stock and a little ketchup - the BBQ sauce is ready.
  6. Finish at the grill: Brush the ribs with the sauce and allow to caramelize briefly on the grill.
  7. Extra kick: Pour a little maple syrup over the ribs just before the end.
