Wasabi mousse with smoked salmon - the perfect starter with a wow effect

This airy, spicy mousse with a hint of wasabi and delicate smoked salmon is the ideal starter for festive occasions or a fine meal at home. It is easy to prepare, looks elegant and impresses with its sophisticated flavors. Simple, quick and impressive - home cooking with a twist.

Preparation

Ingredients for 4 portions

For the mousse:

  • 4 egg yolks

  • 2 egg whites

  • 2 tsp wasabi

  • 150 ml milk

  • 2 tbsp yogurt

  • 2 sheets of gelatine

  • 1 tbsp spinach powder (for natural green color)

  • 1 tsp green food coloring (optional, for more color intensity)

  • Salt

For the topping:

  • Smoked salmon

  • Wild herbs

  • Olive oil

  • Vinegar

  • Cress

Preparation - step by step

  1. Soak the gelatine and whip the mousse base

    Stir the egg yolk, milk and wasabi over a hot bain-marie until the mixture thickens slightly. Dissolve the soaked gelatine in the mixture.

  2. Coloring and refining

    Stir in the spinach powder - this provides a natural, beautiful color. If you like, you can help with a little food coloring. Fold in the yogurt and season with salt to taste.

  3. For airiness

    Beat the egg whites until semi-stiff and carefully fold into the mousse so that it remains fluffy.

  4. Allow to cool

    Pour the mixture into glasses or small ramekins and chill for at least 4 hours.

  5. Sideboards

    Garnish with smoked salmon, marinated wild herbs, a little vinegar and oil and fresh cress.

Tip from the househusband

  • For more spiciness, simply stir in a little more wasabi

  • Vegetarian version? Replace salmon with avocado or roasted nuts

  • It gets more sophisticated with toasted sesame seeds or salmon caviar as a topping
