
Styrian pumpkin thumb pasta with caramelized paprika pointed cabbage & pumpkin seed pesto
An autumnal delight from Styria! These pumpkin thumb noodles are fried golden brown, fluffy on the inside and have a wonderfully rounded flavour thanks to the caramelized paprika pointed cabbage and nutty pumpkin seed pesto. A perfect vegetarian dish for cooler days.
Preparation
Ingredients for 4 portions
For the pumpkin thumb pasta:
- 700 g floury potatoes (potatoes)
- 500 g Hokkaido pumpkin
- 300 g flour
- 80 g egg yolk
- 90 g durum wheat semolina
- 30 g brown butter
- Salt, pepper
- Clarified butter for frying
For the caramelized pointed bell pepper cabbage:
- 1/2 head of pointed cabbage
- 1 onion
- 50 g sugar
- 1 teaspoon caraway seeds
- 50 g butter
- 50 ml white balsamic vinegar
- 50 ml white wine
- 1 tsp paprika powder
- 120 ml beef broth (or vegetable broth for the vegetarian version)
- Salt, pepper
- Corn starch for thickening
For the pumpkin seed pesto:
- 50 g basil
- 100 g roasted pumpkin seeds
- 250 ml olive oil
- 50 g Parmesan cheese
- 50 g pecan nuts
- Sea salt & black pepper
Preparation
- Prepare the potatoes & pumpkin: Spread the potatoes and Hokkaido pumpkin in large pieces on a baking tray and bake in the oven at 180°C until soft. Leave to evaporate, peel and press through a press.
- Caramelize the cabbage: Caramelize the sugar in a pan. Finely chop the onion, sauté in butter with the sliced pointed cabbage and caraway seeds until translucent. Deglaze with balsamic vinegar and white wine, stir in the paprika powder, pour in the soup, cover and simmer for approx. 20 minutes. If necessary, thicken with a little cornstarch.
- Shape the thumb noodles: Quickly knead the potato and pumpkin mixture with the flour, egg yolk, semolina, brown butter, salt and pepper to form a smooth dough. Form small rolls about the thickness of a thumb. Fry in clarified butter until golden brown.
- Mix the pesto: Process all the ingredients in a blender to make a creamy pesto. Season to taste with salt and pepper.
- Dressing: Serve the thumb pasta with the paprika cabbage and a dollop of pumpkin seed pesto. If you like, add roasted pumpkin seeds on top.
