
Souvlaki - original Greek barbecue delights from the spit
A juicy meat skewer with a Mediterranean flavor: Greek souvlaki is simple, spicy and a real summer classic. With the right marinade and a sophisticated glaze, it becomes a dish straight out of a taverna in Crete.
Preparation
Ingredients (for 4 people)
Meat skewers:
- 1 kg pork neck or lamb (neck or belly)
- 20 ml olive oil
- Juice of 3-4 lemons
- 3 tbsp dried oregano (Greek)
- 1 teaspoon salt
- Optional: pepper to taste
- Wooden skewers (soak for 1-2 hours beforehand)
Glaze:
- 3 tablespoons olive oil
- 1 tbsp smoked paprika powder
- Juice of half a lemon
- 1 teaspoon oregano
- Salt & pepper to taste
Preparation
- Prepare the marinade: Mix together the lemon juice, olive oil, oregano and salt. Cut the meat into bite-sized pieces, mix with the marinade, cover and leave to marinate in the fridge for at least 4 hours - ideally overnight.
- Prepare the skewers: Soak the wooden skewers in water before grilling to prevent them from burning. Skewer the meat loosely and not too tightly - alternate between thick and thin pieces for perfect juiciness.
- Grill: Preheat the barbecue to a high heat (approx. 220 °C). Grill the skewers all over, then finish grilling over a medium heat. The total grilling time is about 8-10 minutes. Turn regularly.
- Apply the glaze: mix the olive oil, paprika powder, lemon juice and oregano. Brush the finished skewers with the glaze just before serving or while grilling - this intensifies the flavor even more.
