Confit garlic & aromatic garlic butter - ingeniously simple & full of flavor!

Preserving garlic and making it even better at the same time? That's exactly what this method does! The confit garlic brings an intense aroma to your kitchen - and the garlic butter stirred from it is the secret star on bread, steak or with grilled vegetables. This recipe not only adds spice, but also real versatility to your plate.

Preparation

Ingredients for confit garlic:

  • 300 g peeled garlic cloves
  • 150-200 ml olive oil (extra virgin)
  • 1 teaspoon salt
  • 1-2 tsp green pepper (whole)
  • 2 sprigs of fresh thyme or 1 teaspoon of dried thyme

Ingredients for the garlic butter:

  • 2 tablespoons of confit garlic (soft, almost spreadable)
  • 150 g butter (room temperature)
  • Optional: 1 pinch of salt

Preparation:

 

  1. Place the peeled garlic cloves in a small pan or ovenproof dish.
  2. Cover with olive oil and add the remaining ingredients.
  3. Confit in the oven at approx. 110 °C fan oven for 90 to 100 minutes. The garlic should be soft but not brown.
  4. Then leave to cool, pour into a clean jar and cover with the oil. It will keep for several weeks in the fridge.

Preparation Garlic butter:

  1. Crush the confit garlic with a fork or mix with the butter.
  2. Mix everything well until you have a homogeneous, aromatic garlic butter.
  3. Roll in cling film and refrigerate or use immediately.
