
Crispy cheese dumplings with mountain cheese - the best recipe from Austria
Hearty, cheesy, crispy - that's exactly how Kaspressknödel should taste. In Salzburg and Tyrol, they are part of real pub cuisine, whether served in beef soup or with salad. In this recipe, I'll show you how you can easily make the original Kaspressknödel with tangy beer cheese and aromatic mountain cheese at home. Golden brown on the outside, fluffy on the inside - a real home-style dish that is perfect for preparing and even freezing.
Preparation
Ingredients for approx. 8-10 cheese dumplings:
Base mass

5 stale bread rolls or approx. 300 g dumpling bread

250-300 ml milk

4 eggs
-
1 onion
-
1 garlic clove
-
60 g butter
Cheese & herbs

170 g beer cheese
-
250 g mountain cheese
-
¼ bunch parsley, finely chopped
Spices & fat

Salt, pepper, nutmeg

Preparation - step by step:

Prepare the onion & garlic:
Finely dice and sauté in butter until translucent.

Prepare the dumpling mixture:
Heat the milk gently and pour over the dumpling bread with the sautéed onions. Leave to soak well.

Fold in the eggs & cheese:
Whisk the eggs and add to the bread mixture together with the grated cheese, parsley and spices. Mix everything together loosely.

Leave the dough to infuse:
Leave the mixture to rest for approx. 10 minutes. If it is too soft, mix in a little flour.

Form & fry the dumplings:
Shape the mixture into 8-10 flat patties and fry in hot clarified butter until golden brown on both sides.

Serve:
Either add directly to a hearty beef soup or enjoy with a salad as a main course.
Tips from the househusband:
- Do not make the dumpling mixture too firm - otherwise they will become dry.
- Beer cheese provides a wonderfully spicy note.
- Great for freezing and easy to bake in the pan later.
