Potato soup with porcini mushrooms & bacon - Creamy potato soup just like grandma used to make

This classic potato soup is warming, filling and full of flavor. With dried porcini mushrooms, spicy bacon and a velvety consistency, you can bring a piece of Austrian home cooking straight to your table. Whether from the Waldviertel, Viennese cuisine or the inn around the corner - this is what real potato soup tastes like.

Preparation

Ingredients for 4 people:

For the soup:

  • 1.5 liters of vegetable soup

  • 30 g dried porcini mushrooms

  • 1 onion

  • 300 g waxy potatoes

  • 300 g floury potatoes

  • 100 ml whipped cream

  • 1 tbsp butter

  • 1 tsp marjoram

  • Salt & pepper

For the insert:

  • 200 g waxy potatoes

  • 1 pinch of salt

  • Optional: 1 teaspoon caraway seeds (in a tea bag)

For the topping:

  • 120 g bacon

  • 1/4 stalk leek

Preparation - step by step

  1. Soak the porcini mushrooms

    Heat the vegetable soup gently (do not boil) and soak the dried porcini mushrooms in it.

  2. Prepare the basic soup

    Fry the onion in butter until translucent. Peel the waxy and floury potatoes, roughly dice and add to the soup. Strain the soaked mushrooms and set aside.

  3. Cook & puree

    Season with salt, pepper and marjoram. Cook everything until soft, refine with whipped cream, puree and pass through a sieve - for an extra fine consistency.

  4. Prepare the filling

    Dice additional potatoes into small cubes and cook in salted water. Optionally, season with some caraway seeds in a tea bag. Squeeze the porcini mushrooms well and chop finely.

  5. Prepare the topping

    Cut the bacon into cubes and finely chop the leek. Fry the bacon in a pan, add the leek and fry until golden brown.

  6. Arrange & serve

    Pour the soup into plates, add the diced potatoes and porcini mushrooms, top with the bacon and leek mixture.
