Ingenious wild garlic spread - creamy spring dip with butter & curd cheese
A seasonal spread that not only tastes like spring, but is also quick and easy to make! In this recipe, I'll show you how to conjure up a creamy, tangy dip from fresh wild garlic, butter, curd cheese and crème fraîche - ideal for a snack, barbecue or simply as a highlight on a good loaf of bread.
Preparation
Ingredients (for approx. 4-6 portions):
For the spread:
- 100 g butter at room temperature
- 100 g curd cheese or cream cheese
- 100 g crème fraîche
- 1 handful of fresh wild garlic (approx. 30-40 g)
- 1 teaspoon tarragon mustard or classic mustard
- 1 teaspoon lemon juice
- Some chili (optional)
- Salt, pepper
- 1 tbsp yogurt (for more creaminess)
- Ground caraway seeds to taste
Preparation
- Beat the butter with a hand mixer or whisk until creamy and fluffy.
- Stir in the curd cheese, crème fraîche and optional yogurt.
- Finely or roughly chop the wild garlic and add to the mixture.
- Season with mustard, lemon juice, salt, pepper and optional chili.
- Refine with caraway seeds to taste.
- Serve fresh or chill. Can also be wonderfully formed into small balls.
