
Carpaccio with burrata & homemade pizza bread - Italy on your plate
This recipe brings Italian delicacies straight to your home: wafer-thin sliced fillet of beef, fresh herbs, creamy burrata and oven-fresh pizza bread with basil and tomatoes. The perfect dish for special evenings, as a starter for guests or simply to enjoy.
Preparation
Ingredients for 2 people
For the carpaccio:
- 300 g fillet of beef
- 2 tbsp pine nuts
- 150 g rocket
- 3-4 king oyster mushrooms
- 2 Burrata
- 1 tomato
- 6-8 capper apples
- Juice of 2-3 lemons
- Olive oil, salt, pepper, piment d'Espelette
- 1 tbsp butter
- Some pizza oil (alternatively good olive oil with chili and garlic)
For the pizza bread:
- 300 g flour type 00
- 200 g flour type 550
- 330 ml water
- 11 g salt
- 5 g yeast
- 250 g passata
- ½ bunch of fresh basil
- Olive oil, salt, pepper
Preparation - step by step
1. prepare the pizza dough
Knead both types of flour with yeast, salt and water into a smooth dough. Cover and leave to rest for 30 minutes. Then portion out and place in the fridge.
2. roast the pine nuts
Roast in a pan without fat until golden brown and set aside.
3. fry the king oyster mushrooms
Fry in a little olive oil, add butter and lemon juice, fry until golden brown. Keep warm.
4. cut & marinate the carpaccio
Cut the fillet of beef into very thin slices and press flat. Marinate with lemon juice, salt, pepper and a little pizza oil.
5. marinate & arrange the rocket
Dress with a little lemon juice and olive oil. Spread over the meat.
6. burrata and other toppings
Pluck the burrata and place over the carpaccio. Dice the tomato, slice the caper apples and arrange everything nicely. Add the pine nuts and fried mushrooms.
7. finish & bake the pizza bread
Remove the dough from the fridge 1 hour before baking. Shape into flatbreads, spread with passata and basil, season with olive oil, salt & pepper. Bake at 250°C in the oven or on the grill until crispy.
