Recipe Swiss sausage salad with Emmental & gherkins

Simple, quick and wonderfully refreshing - this Swiss sausage salad is just the thing for hot summer days, barbecues or a quick snack. Prepared in just 15 minutes, it brings a real taste of Swiss cuisine to your plate. With Lyoner cheese, Emmental cheese and an aromatic marinade, it gets even better overnight!

Preparation

Ingredients for approx. 4 portions

For the sausage salad:

  • 300 g extra sausage / lyoner or veal spare ribs
  • 300 g Emmental cheese
  • 1 jar of gherkins (approx. 300 g drained weight)
  • 2 pointed peppers
  • 2 spring onions
  • ½ bunch parsley
  • 2 red onions
  • 8 g sugar
  • 8 g salt
  • 25 g apple cider vinegar
  • Pepper & cayenne pepper to taste

🍶 For the infusion:

  • 100 g water
  • 100 g apple cider vinegar
  • 20 g sugar
  • 5 g salt
  • 2 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tsp brown mustard seeds
  • 1 tsp yellow mustard seeds
  • 3 garlic cloves

Preparation steps

1️⃣ Prepare the infusion: Place all the ingredients for the infusion in a pan, bring to the boil and leave to infuse for about 10 minutes over a medium heat. Then strain through a fine sieve and set aside.

2️⃣ Chop the salad: Cut the sausage, cheese, gherkins, onions, pointed peppers and spring onions into thin strips or slices. Finely chop the parsley.

3️⃣ Mix & marinate: Place everything in a large bowl. Season with sugar, salt, apple cider vinegar, pepper and cayenne pepper. Pour over the cooled infusion and mix everything well. Leave to infuse in the fridge for at least 30 minutes.

💡 Tip: The salad tastes even better if you leave it to infuse overnight in the fridge.
