
Make your own vermouth - with white wine, herbs & brandy!
Homemade vermouth is a real highlight for connoisseurs, amateur bartenders and DIY fans. In this recipe, I'll show you step by step how to make your own vermouth using simple ingredients - inspired by Noilly Prat and classic aperitif recipes. Ideal for mixing, as a digestif or simply on the rocks.

Preparation
Ingredients for approx. 1.7-2 liters of homemade vermouth:
Basis:
- 1500 ml dry white wine
- 140 ml brandy
Herbs & spices:
- approx. 4 tablespoons of chopped wormwood
- ½ Vanilla pod
- 2 star anise
- 8 cardamom pods
- 10 cloves
- 2 bay leaves
- 2 tsp black pepper
Fruit flavors:
- 1 peach (fresh or dried)
- Zest of 1 lemon
- Zest of 1 grapefruit
Sweetness:
- 40 g sugar
- 40 g rock candy
Preparation - step by step:
- Prepare approach: Pour the white wine with all the herbs, spices, zest and the peach into a large jar or container. Seal well.
- Let it pull: Leave to infuse for 7-10 days in a cool, dark place. Gently swirl once a day.
- Strain: After the infusion time, strain through a fine sieve or cloth.
- Refine: Mix with the brandy and sugar (also candy sugar) and leave to rest for another 3-5 days.
- Filling: Fill into sterile bottles and seal well. If the finished vermouth is cooled well, it will keep for several weeks once opened.
