Apricot dumplings with curd cheese dough & cinnamon crumbs - just like grandma used to make!

This is what childhood in Austria tastes like! These classic apricot dumplings with tender curd cheese dough, liquid sugar heart and crispy cinnamon crumbs are a sweet dream from the local pastry kitchen. Whether as a dessert or main course - this recipe brings back memories!

Preparation

Ingredients (for approx. 9-12 dumplings)

For the dumplings:

  • 9-12 apricots
  • 9-12 sugar cubes
  • 500 g curd cheese
  • 160 g butter (room temperature)
  • 2 eggs
  • 250 g flour
  • 50 g semolina
  • 40 g sugar
  • 1/2 vanilla pod (pulp)
  • Zest of a lemon
  • Water & 1 tbsp salt for cooking

For the cinnamon crumbs:

  • 120 g butter
  • 120 g breadcrumbs
  • 40 g sugar
  • 1 teaspoon cinnamon (optional)

Preparation

1. prepare the apricots: Carefully pit the apricots, but do not cut all the way through. Place a sugar cube in the center of each fruit and close again.

2. make the curd cheese dough: Mix the curd cheese, soft butter, eggs, sugar, vanilla pulp and lemon zest well. Work in the flour and semolina until you have a smooth dough. Cover the dough and leave to rest in the fridge for approx. 30 minutes.

3. form the dumplings: With floured hands, take small portions of the dough, flatten them and wrap each one in a prepared apricot. Close the dumplings well and place in a lightly floured tin.

4. cooking: Bring water with 1 tbsp salt to the boil in a large pan. Carefully place the dumplings in the water and simmer over a low heat for approx. 12-15 minutes until they rise to the surface.

5. prepare the cinnamon crumbs: Melt the butter in a pan, add the breadcrumbs and sugar (cinnamon optional) and stir-fry until golden brown.

6 Serve: Lift the finished dumplings out of the water with a slotted spoon, drain well and roll in the breadcrumbs. Sprinkle with powdered sugar or serve with vanilla sauce.
